A very good morning to you. Thought I would start the day by sharing one of my favourite biscuit recipes with you. These take about 20 minutes to prepare. So what will you need? The Ingredients are:
Butter 125g, Sugar 75g, Sultanas/raisins 110g, 1 Egg (beaten), Self Raising flour 150g (sifted), Cornflakes 120g (crushed), Greased baking tray
Mix the butter and sugar, and cream together with an electric mixer or wooden spoon. Add a lightly beaten egg and mix until combined. Stir in the flour and sultanas/dried fruit.
Place the (crushed) cornflakes in a separate bowl. Add a teaspoon of mixture to the cornflakes and roll it around in a ball until covered.
Place the rounded balls on a greased tray about 2-3cm apart. Gently push down on them from the top to flatten them slightly. Bake at 180-190 C/ 350-375 F /GM 4 for approximately 20 minutes or until golden.
Tip – If you are unsure whether your bickies are cooked, lift a biscuit off the tray with a spatula and look at the base. If the base is golden, the likelihood is that your biscuit is cooked. This recipe will make 20 -30 biscuits.
